Abstract

Nutritional challenges remain a major public health concern in Indonesia, particularly those associated with unhealthy dietary patterns, inadequate nutrient intake, and the increasing prevalence of nutrition-related disorders. Exploring local plant resources with high nutritional value represents a strategic approach to supporting food diversification and improving community nutrition. Red Malabar spinach (Basella rubra Linn.) is a nutrient-rich leafy vegetable containing vitamins, minerals, dietary fibre, and bioactive compounds with potential applications in functional food development. This study aimed to evaluate the potential of DOLA-CHIPS, an innovative snack product derived from red Malabar spinach leaves, as a nutritious alternative snack to support balanced nutrition. The study employed a comprehensive literature review approach by synthesising evidence from peer-reviewed journal articles, conference proceedings, research reports, and publications from reputable scientific institutions. Data were analysed descriptively and comparatively, complemented by SWOT analysis to assess product development opportunities and market competitiveness. The findings indicate that red Malabar spinach possesses substantial nutritional and functional properties that make it suitable as a raw material for healthy snack production. DOLA-CHIPS demonstrates considerable potential as an innovative food product that promotes local food diversification, enhances the utilisation of underutilised plant resources, and has the potential to support local food diversification, enhance the utilisation of underutilised plant resources, and contribute to strategies aimed at improving community nutrition.. The novelty of this study lies in integrating the nutritional potential of Basella rubra into a value-added snack product that simultaneously supports balanced nutrition, food security, and local economic empowerment. Therefore, DOLA-CHIPS represents a promising functional snack innovation with prospects for wider development within sustainable food systems in Indonesia.
